This amazingly decadent Puttanesca sauce is handcrafted by our favorite celebrity chef, Chef William Cornelius. He makes it from the best tomatoes, onions, peppers, and spices, carefully infused with our delicious Red Ruby wine!

Chef William Cornelius is an Adirondack Winery staple. Joining us for the Adirondack Winery anniversary celebration and Adirondack Wine & Food Festival each year!

At the 2018 Adirondack Wine & Food Festival, Chef William demonstrated "Puttanesca Panzanella Salad"

Puttanesca Panzenella Salad with Vinaigrette Dressing

  • ½ Lb. ciabatta or baguette, preferably stale, cut into 1” cubes (about 6 cups)
  • 1/3 C. extra-virgin olive oil, more to taste
  • 1 tsp. Gorgeous Garlic or garlic/salt blend (more to taste)
  • 8 oz. fresh mozzarella, torn or cut into bite-size pieces
  • 2 – 12oz. jars Chef William Creations Red Ruby Puttanesca
  • ¼ C. red wine vinegar, more to taste
  • 14 C. honey sweet mustard
  • salt & black pepper to taste
  • 1 Tbsp. chopped fresh oregano or thyme (or a combo)
  • fresh basil leaves
  • fresh tomato slices
  • shredded parmesan cheese

Heat oven to 425 degrees. Spread the bread cubes on a rimmed baking sheet and toss with 2 Tbsp. olive oil and a tsp. of Gorgeous Garlic seasoning. Bake until dried out and golden brown (about 7-15 minutes). Let cool and set aside. *NOTE* ~ You could also pan sauté the Garlic Bread Cubes in a non-stick pan.

Red Wine Mustard Vinaigrette

  • In a medium bowl, combine ¼ C. red wine vinegar, the mustard, ¼ tsp. salt and black pepper to taste. While whisking constantly, slowly drizzle in the remaining ¼ C. olive oil until the mixture is thickened. Blend in oregano and/or thyme then set aside.
  • To Build the Salad ~
    • In a large salad bowl, add bread cubes, torn mozzarella and 2 jars of Red Ruby Puttanesca then toss well. Let sit for at least 30 minutes or up to 4 hours before serving.
    • Let all the flavors soak into the bread. For service, toss the bread cubes with Red Wine Mustard Vinaigrette and garnish with fresh tomato, shredded Parmesan, and basil leaves.
    • Option: Serve Panzenella Puttanesca on a bed of Romaine lettuce tossed in Red Wine Mustard Vinaigrette or serve a tapas portion on a whole singe leaf of Romaine.

*NOTE* ~ Our version of Puttanesca has Adirondack Winery’s Red Ruby Wine as its first ingredient!
